5 large sweet onions (Vidalia, if possible)
1/2 cup (1 stick) margarine
Parmesan cheese
Crispy buttery crackers (like Ritz or Townhouse)Recipe
Peel and slice onions into thin rings. Sauté in margarine until limp or opaque. Pour half of onions into 1 1/2-quart casserole. Cover with Parmesan cheese, then crushed crackers. Repeat layers and bake uncovered in 325ºF oven until golden brown, about 30 minutes.
Posted by: MissEllie: This is my favorite thing to take to a cookout. My friends call it "Onion Crisp". I cook the onions a little more than this and like to let them get browned and somewhat caramelized.
