    Fresh Mushroom Soup

    2 Tbsp margarine
    3 med onions, coarsely cut
    1 lb mushrooms, sliced
    1/3 c chopped fresh parsley
    2 Tbsp chicken bouillon, dissolved in 3 c hot water
    3 Tbsp tomato paste
    1 clove garlic, crushed
    1/4 tsp black pepper
    1/2 c dry white wine

    Recipe



    Melt margarine in pot. Saute onions & garlic till almost tender. Add mushrooms & saute briefly. Add rest of ingredients. Simmer 15 min. Keep warm till ready to serve. Place slice of french bread (or croutons) in bowls. Sprinkle generously with blend of at least 3 cheeses (i.e. parmesan, montery jack, swiss). Ladle hot soup over cheeses. Makes 4 main course servings.
