    List of Ingredients




    1/2 pound medium shrimp, peeled and deveined
    2 teaspoon butter
    2 Tablespoons unbleached flour
    2 cups fat-free, reduced-sodium chicken broth
    2 cups 1% milk
    1 cup chopped onion
    1 cup diced, seeded tomato
    1/2 cup diced celery
    1/4 cup tomato paste
    1 cup yellow corn
    2 teaspoons dry sherry
    1/4 teaspoon salt
    1/4 teaspoon black pepper

    Recipe



    Coarsely chop the shrimp and set aside.

    In a 3-quart saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute. Add the broth and milk and bring to a boil. Lower the heat, and add the onion, tomato, celery, and tomato paste. Cook for 3 minutes.

    Add the corn and reserved shrimp. Cook for 3 minutes until shrimp is cooked through. Add the sherry, salt, and pepper. Serve.
