    "This is a recipe that came in the packet with the Light and Tasty Magazine. I made it this afternoon for my DH's lunch and he just kept going on about how good it was. And he doesn't even like "soup". lol Anyway, here is the recipe."

    List of Ingredients




    1/2 c chopped onion
    2 T butter
    1/3 c flour
    1/2 - 1 t salt
    2 1/2 c milk
    1/8 t nutmeg
    1 c water
    3/4 c cubed process american cheese
    1 pkg (10 oz) frozen chopped spinach, thawed and drained
    oyster crackers, optional

    Recipe



    In a 3-qt saucepan, saute onion in butter until tender. Stir in the flour, salt and nutmeg until smooth. Gradually whisk in milk and water. Add cheese; cook and stir over med heat until melted. Add spinach; cover and simmer for 4-5 minutes or until heated through. Serve with oyster crackers if desired.

    Yield: 5-6 srvgs
