    White-Bean Smoked-Sausage Soup

    1 tablespoon extra-virgin olive oil
    2 cups chopped onion
    3/4 cup peeled and diced carrots
    1 teaspoon minced garlic
    5 cups chicken stock
    2 (14.5-ounce) cans fire-roasted tomatoes
    2 (15-ounce) cans Great Northern Beans
    1 (1-pound) package smoked sausage, cut into 1/2-inch thick slices
    1/2 teaspoon salt
    1 tablespoon chopped parsley

    Recipe



    In a large stock pot, heat oil over medium-high heat. Add onion, carrots, and garlic; cook for four minutes, or until vegetables begin to soften. Add chicken stock, beans, tomatoes, sausage, and salt; simmer for 20 minutes. Add parsley and cook for five mintues. Serve hot.

    Posted by: Lonesome_Drifter - That is how the recipe is in the magazine, but I always double this for my family (there is four of us) and I add more carrots, onion, and fire-roasted tomatoes. I also add other spices to suit our tastes. But, this is very well recieved in my family when I make this.
