    1 C. FLOUR
    1/4 TSP. BAKING POWDER
    PINCH SALT
    3 TBSP. SUGAR
    4 TBSP. UNSALTED BUTTER
    1 EGG

    CHEESECAKE BATTER:
    1 1/2 LBS. CREAM CHEESE
    3/4 C. SUGAR
    1/4 TSP. GROUND CLOVES
    1 TSP. GROUND CINNAMON
    1/2 TSP. GROUND GINGER
    1 1/2 C. PUMPKIN PUREE (ONE 1 LB. CAN)
    4 EGGS



    Recipe

    BUTTER THE BOTTOM OF A 9" SPRING FORM PAN.

    PREHEAT OVEN TO 350 DEGREES AND SET RACK IN CENTER OF OVEN. FOR THE DOUGH, COMBINE DRY INGREDIENTS IN FOOD PROCESSOR AND PULSE SEVERAL TIMES TO MIX. DIVIDE BUTTER INTO 6 PIECES AND ADD TO WORK BOWL. PULSE TO MIX IN FINELY. ADD EGG AND PULSE UNTIL DOUGH FORMS A BALL.

    PRESS HALF THE DOUGH INTO THE BOTTOM OF THE PREPARED PAN. PIERCE AT 1 INCH INTERVALS WITH A FORK. BAKE FOR ABOUT 20 MINUTES, UNTIL DRY AND GOLDEN. COOL THE PASTRY LAYER. LOWER THE OVEN TEMPERATURE TO 325 DEGREES.

    FOR BATTER, BEAT CREAM CHEESE WITH MIXER ON MEDIUM SPEED, UNTIL LIGHT. BEAT IN SUGAR, SPICES AND PUREE, SCRAPING BOWL AND BEATER OFTEN. BEAT IN EGGS, SCRAPING OFTEN AGAIN. SCRAPE BATTER INTO PREPARED PAN.

    PLACE PAN ON A DOUBLE SQUARE OF FOIL AND FOLD FOIL AROUND PAN BOTTOM. PLACE SPRING FORM IN A SMALL ROASTING PAN AND ADD AN INCH OF WARM WATER TO ROASTING PAN. BAKE CHEESECAKE ABOUT 50 TO 60 MINUTES, OR UNTIL SLIGHTLY FIRM IN CENTER. COOL ON A RACK; WRAP AND REFRIGERATE WHEN COLD.

    TO SERVE, REMOVE SPRING FORM SIDE AND SLIDE CAKE TO A PLATTER.
