    2 LBS. BEEF, GROUND THREE TIMES
    PINCH OF SALT
    1 LARGE ONION
    2 TSP. MINT LEAVES
    1 1/2 TSP. ALLSPICE
    PINCH OF BLACK PEPPER
    PINCH OF CUMIN POWDER
    PINCH OF RED PEPPER

    FIRST WASH AND SOAK WHEAT FOR 15 MINUTES IN WARM WATER TO COVER WHEAT. MASH SPICES AND ONION TOGETHER WITH A MORTAR AND PESTLE, BOTTLE OR GLASS. MIX ONION AND SPICES WITH BEEF. MIX WHEAT WITH BEEF AND OTHER INGREDIENTS. ADD WATER TO MIXTURE UNTIL NOT TOO STICKY.

    STUFFING FOR KIBBIE

    1/3 OF 8 OZ. PKG. PINE NUTS
    ABOUT 1/2-3/4 LBS. LAMB, DICED LARGE
    PINCH OF SALT
    PINCH OF PEPPER
    1 ONION, DICED
    PINCH OF MINT
    1 TBSP. ALLSPICE
    PINCH OF CUMIN POWDER

    BROWN PINE NUTS IN BUTTER, TAKE OUT OF PAN, BROWN LAMB IN
    REMAINING BUTTER WITH SPICES, PUT PINE NUTS BACK IN PAN, SHUT OFF GAS. PUT HALF OF THE BURGER MIXTURE IN BOTTOM OF A 9X13 PAN. PUT STUFFING ON TOP OF BOTTOM LAYER. PUT REST OF BURGER MIXTURE ON TOP OF STUFFING TRYING NOT TO PRESS DOWN TOO HARD SO AS NOT TO PRESS STUFFING INTO BOTTOM LAYER OF BURGER MIXTURE. CUT IN SQUARES. SCORE TOP OF EACH SQUARE. PUT YOUR FINGER IN THE MIDDLE OF LAYER AND POUR OIL IN HOLE AND ALL OVER BURGER MIXTURE. BAKE 1 HOUR AT 350 DEGREES.
