    4 servings (1 1/2 cups), 2 points per serving

    List of Ingredients




    8 oz. extra lean ground turkey or beef (beef is best)
    1 & 3/4 cups (1 14 1/2 oz. can) reduced fat and sodium beef broth
    1 cup reduced sodium tomato juice
    1 - 10 oz. pkg. frozen mixed veggies, thawed
    1/2 cup chopped onions
    1 tsp. parsley flakes
    1/8 tsp. black pepper
    I also added maybe a tsp of Worcestershire Sauce, a couple of shakes of McCormick’s steak seasoning, and 1 small potato - diced.

    In large skillet sprayed with butter flavored spray - brown meat.

    Spray slow cooker with butter flavor spray. Combine meat, beef broth and tomato juice. Add veggies, onion, (potato if using) parsley and black pepper. Add W. sc. if using. Mix well. Cover and cook on low for 6 to 8 hours. Mix well b/4 serving.

    Two things - I did not have much time -- so I cooked it on high for 3 hours. Also I thought I was thawing gr. beef and when I opened the pkg. it was two cube steaks. :-( I took one steak and cut it into very small pieces and browned this and used it for the meat. It was no more than 1/4 #. The other I browned and cooked thru and then used my "Food Saver: (a great appliance) to pkg. and freeze the other steak. Now when I have my chicken (eat almost every night) my husband can have a cube steak.
    Serves 4 - 1 & 1/2 cup

    He: 1 & 3/4 veg. 1 & 1/2 Protein 1/2 bread
    139 calories, 3 gm fat. 14 gm. protein, 14 gm carb. 545 mg sodium 28 mg calcium 3 gm fiber
    Diabetic: 1 & 1/2 meat 1 veggie 1/2 starch
