    SERVES 4. 6 POINTS EACH SERVING.

    List of Ingredients

    1 CHICKEN, CUT INTO PIECES (ABOUT 3 LBS.)
    1/2 C. CAPERS
    1 1/2 C. TOMATOES, CHOPPED
    1 GREEN PEPPER, CHOPPED
    1 ONION, CHOPPED
    1 PIMENTO, CHOPPED
    SALT AND PEPPER, TO TASTE

    Recipe

    PLACE ALL INGREDIENTS IN POT WITH JUST ENOUGH WATER TO COVER. COVER AND SIMMER 1 1/2 HOURS. IF THERE IS TOO MUCH LIQUID REMOVE COVER AND COOK UNTIL MOST OF IT IS EVAPORATED. SERVES 4.
