    Mexican Cornbread

    List of Ingredients


    • 1 c, cornmeal
    • 1 c. flour
    • 1 tbsp. baking powder
    • 1 tsp. salt
    • 2 tbsp. sugar
    • 1 c. buttermilk
    • 1 egg beaten
    • 1 can cream corn
    • Dash hot sauce
    • 1/4 c. bacon fat
    • 1/4 c. minced green onions with tops
    • 1/2 c. shredded cheddar


    Instructions


    1. Combine 1st five things in a bow. Set aside.

    2. In another bowl combine buttermilk and egg. Add corn and remaining things. Pour over dry ingredients and stir.

    3. Do not overmix. Pour batter in greased 8 inch square pan. Bake at 400 degrees 35 min. Cool 5 min.
