    tomatoes (we normally use large red tomatoes or organic cluster tomatoes)
    olive oil
    balsamic vinegar
    fresh thyme sprigs
    salt
    sugar

    Recipe



    Preheat oven to 375 degrees. Slice tomatoes in half and place cut side up on deep baking pan lined with parchment paper. Sprinkle tomatoe halves with olive oil, thyme and a little bit of balsamic vinegar, top with a little salt and sugar. Bake in oven for 3-4 hours checking every 20 minutes or so until tomatoes have reduce in size considerably and are concentrated.

    Roasted tomatoes can be used on toasted bread as brushetta with fresh mozzarella or cheddar. They are delicious on pizza instead of fresh tomatoes. They are also terrific on salad. You can also reserve the oil that collects in the bottom of the pan to use in salad dressing or just to dip bread in.
