    List of Ingredients


    • 1 1/4 cups graham cracker crumbs
    • 1/4 cup ground almonds
    • 6 T butter
    • 1/4 cup sugar
    • 1/2 cup juice from Key limes (ordinary limes can be used)
    • 1 1/2 T grated lime zest (use outer, greenest part)
    • 1 can sweetened condensed milk
    • 4 egg yolks
    • 1/2 pint heavy cream whipped with a few drops vanilla


    Instructions


    1. For crust, blend first 4 ingredients until mixture is uniform, crumbly but malleable.
    2. Press into pie pan in a 1/4 inch layer, spreading evenly over bottom of pan and up sides.
    3. Bake 5 - 6 minutes at 375 degrees before filling.
    4. For filling, add lime juice and zest to condensed milk and blend well.
    5. Beat in egg yolks and continue to beat until mixture thickens slightly.
    6. Pour into baked crust and bake 10 minutes at 350 degrees, or until fillng has set.
    7. Refrigerate until cool and top with whipped cream.
