    Red Snapper Casserole

    List of Ingredients

    1 1/2 pounds (6-4 ounce fillets) red snapper
    1/2 to 1 cup flour
    Salt and freshly ground pepper
    3 to 4 tablespoons (3/8 to 1/2 stick) butter
    6 ounces green chili sauce
    12 ounces Monterey Jack cheese grated
    6 ounces cheddar cheese grated
    2 tablespoons minced fresh parsley (garnish)

    Recipe

    Preheat oven to 350 degrees. Coat fillets with flour seasoned with salt and pepper to taste. Heat butter in a medium skillet and lightly saute' fillets on both sides, 2 at a time, adding more butter as needed. Transfer fillets to individual casserole dishes. Divide sauce and cheese among them. Bake about 12 minutes and sprinkle with parsley.
