    Lasagna

    List of Ingredients

    16 ounces ground beef, ground pork, bulk pork sausage or bulk Italian sausage
    1 c. chopped large onion
    2 cloves garlic
    1-7 1/2 ounce can tomatoes, diced or stewed
    1-8 ounce can tomato sauce
    2-6 ounce can tomato paste
    2 tsp. dried basil - crushed
    1 tsp. dried oregano - crushed
    1 tsp. fennel seed - crushed (optional)
    8 dried lasagne noodles
    2 beaten eggs
    3 cups ricotta cheese or cream-style cottage cheese
    1/2 c. grated Parmesan or Romano cheese
    3 tsp. snipped fresh parsley
    8 ounces sliced or shredded mozzarella cheese
    Salt and pepper
    *You can use Italian seasoning in lieu of basil, oregano and fennel seed.

    Recipe

    Cook meat, onion and garlic until meat is done. (I like to brown the meat then put in a food processor until small pieces.) Stir in undrained tomatoes, tomato sauce, tomato paste, basil, oregano, fennel seed and 1/4 tsp. pepper. Bring to boil and simmer at least 15 minutes stirring occasionally.

    Cook noodles for 10-12 minutes or until tender but still firm. Drain noodles and rinse with cold water. Drain well.

    Combine eggs, ricotta or cottage cheese, add parmesean or romano cheese,parsley and salt and pepper to taste.

    Layer 1/2 of the cooked noodles in a 2 quart rectangular baking dish. Spread with 1/2 of the cheese filling. Top with 1/2 mozzarella cheese and add meat filling. Repeat layers.

    Bake in 350 degree oven for 35-40 minutes or until heated through. Let stand 10 minutes before serving.
