    Recipe Introduction


    This makes 10 pints, if canned, or reduce recipe to make desired amount.


    List of Ingredients


    • 16 lbs. tomatoes, peeled & diced
    • 4 medium onions, diced
    • 4 garlic cloves, minced
    • 1/4 cup chopped parsley or 2 T parsley flakes
    • 2 - 12 oz. cans tomato paste
    • 1/4 cup sugar
    • 2 T oregano
    • 2 T basil
    • 3/4 tsp. pepper or peppercorns
    • 1/2 cup salad oil
    • 2 T salt
    • 2 bay leaves


    Instructions


    1. Heat oil; add garlic $ onion; cook until tender.
    2. Add remaining ingredients.
    3. Heat to boiling point; reduce heat and cook partially covered until thick.
    4. Discard bay leaves.
    5. Can in hot, sterilized jars.
    6. Mix with browned ground beef, if desired, and serve over spaghetti.


    Final Comments


    Sauce can also be frozen in smaller quantities for quick meals.
