    Chili Sauce

    List of Ingredients


    • 3 quarts peeled, chopped tomatoes
    • 3 cups chopped celery
    • 2 cups chopped onions
    • 1 cup chopped green pepper
    • 1/4 tsp. salt
    • 1 cup white vinegar
    • 2 cups sugar
    • 1/4 cup brown sugar
    • 1 1/2 tsp. black pepper
    • 1 1/2 tsp. pickling spices


    Instructions


    1. Combine first 5 ingredients; let stand overnight.

    2. Drain, but do not press out liquid.

    3. Add remaining ingredients tomato mixture and bring to a boil.

    4. Simmer 15 minutes, uncovered.

    5. Fill pint jars and can in hot water bath for 10 minutes.



    Final Comments


    Instead of canning, cook mixture longer and refrigerate. Makes about 5 1/2 pints.
