    Spicy Zucchini Boats

    • 4 Small Zucchini
    • 4 ounces of cream cheese, softened
    • 1/2 cup (2 ounces) shredded pepper jack cheese
    • 1/2 cup shredded Parmesan cheese
    • 1/4 teaspoon cayenne pepper
    • 1 teaspoon dried chives


    Instructions


    1. Preheat oven to 350 degrees. Slice zucchini in half lengthwise to make boats.
    2. Blanch zucchini in boiling, salted water, 2 minutes. Drain, then immediately immerse zucchini in an ice bath.
    3. Drain thoroughly; blot excess water with paper towels.
    4. Using knife or small spoon, carefully hollow out zucchini by removing some of its pulp. (Leave at least a 1/4 inch wall.)
    5. Combine cheeses, cayenne pepper and chives in mixing bowl.
    6. Stuff zucchini with cheese mixture. Place in lightly-greased baking dish.
    7. Bake until squash is heated through and cheese is melted, 8 to 10 minutes.
    8. Makes 4 (2-piece) servings.
