    Feta & Sun Dried Tomato Dip

    List of Ingredients


    • 8 oz Feta cheese
    • 8 oz cream cheese
    • 2 Tbl olive oil
    • 1/2 cup chopped green onion, white part & small part of green
    • 2 cloves garlic minced
    • Juice from 1/2 large lemon
    • 6 oz oil packed sun-dried tomato, drained & chopped
    • 7 oz jar roasted red pepper, drained
    • Fresh parsley chopped for garnish


    Instructions


    1. Heat oil in small skillet & saute garlic & green onion until soft.
    2. Put all ingredients except parsley into food processor & pulse until well blended
    3. Refrigerate overnight prior to serving.


    Final Comments


    Makes 3 to 4 cups
