    Recipe Introduction


    These muffins do not rise quite as high as muffins made with all white flour; therefore, the muffin cups can be filled almost to the top.


    List of Ingredients


    • 1 & 1/3 cups white flour
    • 2/3 cup whole wheat flour
    • 1/4 tsp baking soda
    • 1 & 1/2 tsp baking powder
    • 1/2 tsp salt
    • 2 tsp cinnamon
    • 1 tsp ground ginger
    • 3/4 cup apple butter
    • 1/2 cup applesauce
    • 1/4 cup milk
    • 2 large eggs, lightly beaten
    • 3 Tbl wildflower honey
    • 1 tsp pure vanilla extract
    • 3/4 cup plump baking rasins


    Instructions


    1. Pre-heat oven to 400 degrees.
    2. Combine dry ingredients (first 8) in a large bowl. Make a well in the center of the dry ingredients.
    3. Mix remaining ingredients (except raisins) in a bowl. Add wet ingredients to dry ingredients.
    4. Mix by hand until wet ingredients are just combined into dry ingredients (approx. 10-15 strokes). Do not overmix.
    5. Fold in raisins.
    6. Line 12 cup muffin tin with paper liners. Spoon batter into paper liners.
    7. Bake 20-25 minutes. Do not let muffins cool in pan for more than 2 or 3 minutes before taking them out to cool on a wire rack.
    8. Optional..a pinch of sugar may be sprinkled on the top of each muffin prior to baking.
    9. Makes 12 muffins
