    Jack's Sweet Potato Walnut Bread

    Recipe Introduction


    After this bread has cooled, wrap it and let it rest overnight. It's much better the second day.


    List of Ingredients


    • 2 large eggs
    • 1 1/2 cups white sugar
    • 1/2 cup vegetable oil
    • 1/4-1/2 tsp Louisiana hot sauce
    • 1 3/4 cups unbleached, all-purpose flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 1 tsp cinnamon
    • 1/2 tsp freshly grated nutmeg
    • 1 Tbl instant coffee crystals
    • 1/4 cup water
    • 1/4 cup Jack Daniels whiskey
    • 1 1/2 cups cooked & mashed sweet potatoes
    • 1 1/2 cups walnut pieces


    Instructions


    1. Pre-heat oven to 350 degrees. Butter and flour a 9x5 loaf pan.
    2. Beat eggs in a large mixing bowl until they are light and somewhat foamy. Add sugar and mix with eggs until mixture is light and somewhat fluffy. Add vegetable oil and hot sauce and mix well.
    3. Sift flour and combine with baking soda, baking powder, salt, cinnamon, nutmeg and coffee.
    4. Add flour mixture to egg and sugar mixture alternately with water and whiskey. Do not over mix.
    5. Stir in sweet potatoes and nuts by hand until sweet potatoes are well blended into the batter.
    6. Pour batter into prepared pan and bake 60-70 minutes.


    Final Comments


    This bread is good served with cream cheese spread on the slices.
