    Debra Murray's Fabulour Flip Pan Cookbook

    This recipe is a slight adaptation of Debra Murray's original.
    These are my son's favorite wings.

    List of Ingredients




    BRINE
    18 whole chicken wings
    2 quarts water
    ½ cup Kosher salt
    BREADING
    2 cups all-purpose flour
    1 tsp salt
    1 tsp pepper
    1 tsp poultry seasoning
    1 tsp fines herbs
    1 tsp Accent
    1 quart cooking oil

    Recipe



    Cut the chicken wings into drummies and flats. Discard tips. Brine wings in the water with the salt in a non-reactive bowl covered and placed overnight or 8 hours in the refrigerator. When ready to fry heat cooking oil in a 5 or 6 quart Dutch oven to 350 degrees. Drain wings and pat dry with paper towel.
    Put flour and seasonings into a gallon-sized food storage bag and add 8 or 9 pieces of wings at a time and shate to thoroughly bread the wings. Remove from bag and shake off excess flour.
    Add wings to heated oil and fry until wings are golden brown, approx. 8 to 10 minutes. Drain on a wire rack.

    Makes approx. 36 wing pieces
