    Melon Vinaigrette

    List of Ingredients


    • SALAD
    • 1 large cantalope or honeydew melon or a combination of the two
    • 1 box cherry tomatoes, cut into half*
    • 1 large English cucumber, peeled, seeded and diced
    • 1 Tbl fresh parsley leaves, chopped
    • 1 Tbl fresh chives, chopped
    • 1 1/2 tsp dried mint flakes
    • VINAIGRETTE
    • 4 Tbl wine or balsamic vinegar
    • Salt & pepper to taste
    • 1/4 cup sugar (you may want to add a little more)
    • 1/4 clove chopped garlic or a pinch of garlic powder
    • 3/4 cup salad oil
    • * Grape tomatoes may be used instead of cherry tomatoes


    Instructions


    1. Cut melon into half and remove seeds. Scoop into medium-sized balls. Combine salad ingredients.

    2. Combine vinaigrette ingredients and whisk or shake well to mix.

    3. Add vinaigrette to salad and stir to mix. Chill 3-4 hours before serving.



    Final Comments


    This is pretty served from a soup tureen and is good eaten as a cold soup of sorts. Serve with hot herb rolls and honey butter.
