    Morris Library Sweet & Sour Cabbage

    Some cookbook I found once in Morris Library at SIU


    List of Ingredients


    • 8 cups shredded cabbage
    • 6 slices bacon, cut into 1" pieces
    • 1 medium onion, diced
    • 2 Tbl brown sugar
    • 2 Tbl flour
    • 1/2 cup water
    • 1/3 cup white vinegar
    • 1/2 tsp salt
    • Black pepper to taste


    Instructions


    1. Cook cabbage in boiling, salted water until it is tender, about seven minutes. Drain well.

    2. Meanwhile, cook bacon in a skillet until bacon is crisp. Remove bacon from skillet.

    3. Add onion to bacon drippings and cook until soft.

    4. Blend in brown sugar and flour; add water and vinegar and cook, stirring constantly until mixture is thickened.

    5. Add sauce and bacon to drained cabbage. Heat through and serve.



    Final Comments


    Serves 6 as a side dish or more if the cooked noodles were added. The addition of some cooked and sliced Polish or country link sausage makes this a nice supper main dish.
