    Awesome Carrot Cake

    List of Ingredients




    2C. Flour
    2Tsp. Baking Powder
    11/2Tsp. Baking Soda
    1Tsp. Salt
    2Tsp. Cinnamon
    13/4. Sugar
    11/2C. Oil
    4 Eggs
    2C. Grated Carrots
    1C. Crushed Pineapple- Save the juice!!!

    Recipe



    Mix Dry together set aside
    Beat Sugar and Oil together and then beat the eggs in one at a time. Stir in the carrots and the pineapple.
    Add the dry ingredients
    Bake at 350 in a greased 9x13 pan for 45 minutes. Cool.

    Cream Cheese Icing

    1-250G Cream Cheese
    1/2C. Butter
    3Tbs. Pineapple Juice
    2Tsp. Vanilla
    21/2C. Icing Sugar

    Blend all this together and ice the cake.

    This is the best cake I have made and I have made ALOT of carrot cake. It is VERY moist and will keep for a few days if it doesn't all go at once.!!!
