    Coconut Cake

    List of Ingredients




    This is very rich but very delicious

    2/3C. Shortening
    2C. Sugar
    1Tsp. Vanilla
    1C. Water
    1/2Tsp. Cream of tartar
    1/3C. Sweet condensed milk
    2C. Whipping cream
    1/2C. Icing Sugar
    1C. Coconut (shredded)
    23/4C. Flour
    1Tbsp. Baking powder
    1/2Tsp. Salt
    4 Egg whites
    5oz. Evaporated milk

    Recipe



    Cream shortening and sugar. Add vanilla. Combine the dry ingredients. Add the dry to the sugar mixture alternating with the water.
    Beat egg whites with tartar until soft peaks form. Fold into the mix.
    Spread into a greased 9x13 pan. Bake in a 350 oven for 30 minutes.
    Poke holes over the cake when it comes out of the oven. Combine the condensed milk and the evaporated milk and pour it all over the cake.
    Beat whipping cream and add icing sugar until stiff and fold in 3/4C. of the coconut.
    Ice the cake and sprinkle the rest of the coconut on the top.
