    Black Bean Salsa

    Recipe Introduction

    This is good to bring to gatherings. The fresh garlic can be replaced with powdered if you desire. We made this recipe up at home.

    List of Ingredients

    1 (15-oz) can black beans, rinsed
    2 Tbsp Goya Adobo seasoning
    1 Tbsp salt
    1 (15-oz) can diced tomatoes
    1 clove fresh garlic, peeled & minced
    1/4 white onion, diced
    1/2 yellow, orange or red pepper, diced
    1/4 c chopped cilantro
    1 lime
    2 fresh roma tomatoes, diced
    1 c frozen corn




    Recipe

    In a medium sized bowl, combine the rinsed black beans, Adobo seasoning, and salt. Stir to combine spices. Add the canned diced tomatoes, peeled and minced garlic, diced onion and pepper and chopped cilantro. Before serving, add the juice of one lime, diced fresh roma tomatoes and a cup of frozen corn. Refrigerate leftovers for up to 3 days.
