    Caramel Corn

    Recipe Introduction

    This takes a while -- and a whole lot of stirring -- but it's soooooooo worth it. :-)

    List of Ingredients

    2 sticks butter or margarine
    2 c brown sugar
    1/2 c white corn syrup
    1 tsp salt
    1 tsp vanilla
    1/2 tsp baking soda
    popped popcorn
    peanuts

    Recipe

    Pop enough popcorn to fill a deep roasting pan about half to two-thirds full. (Carefully pick through popcorn and remove unpopped kernels.) Add peanuts. In a large saucepan, combine butter, brown sugar, corn syrup, salt and vanilla. Bring to a boil, stirring constantly. continue boiling for five minutes, stirring constantly. Remove from heat and stir in baking soda. It will turn a nice creamy caramel color. Pour over popcorn and peanuts. Bake at 250 degrees for one hour, stirring every 10 minutes. When done, pour out onto waxed paper to cool. Break apart and store in an airtight container.
