    Carrot Cake

    An amazing cake!

    List of Ingredients

    Cake:
    2 c sugar
    2 c flour
    2 t baking soda
    2 tsp cinnamon
    1 tsp salt
    4 eggs
    1 1/2 c oil
    3 c shredded carrots
    1 c pecans/walnuts
    Cream Cheese Icing-
    1 stick butter
    1 (8-oz) pkg cream cheese
    1 (16-oz) box powdered sugar
    1 1/2 tsp vanilla
    1 c chopped pecans/walnuts

    Recipe

    Combine dry ingredients and mix well. Add eggs and oil; mix well. Add carrots and beat with electric mixer for 2 minutes. Grease and flour pan - this cake is excellent baked in a cast iron skillet. Bake at 350 degrees for 30 minutes. Cool. Mix icing ingredients until fluffy. Ice cake.
