These are also called Toad In The Hole. This name originally came from England and it got its name because the egg looks as if it's peeking out of a hole. This is one of Merideth's favorite things to have for breakfast.

4 slices bread
4 eggs
seasonings to taste

Heat the skillet or griddle over medium heat and spray with non-stick vegetable spray. Cut a hole in the middle of each slice of breading using a biscuit cutter or juice glass (keep the circles that you cut out). Place the bread slices and circles in a skillet or griddle. Crack an egg into the hole of each bread slice and season to taste and cook for 2-3 minutes or until eggs are set. Use a spatula to flip and cook second side for an additional two minutes. Place completed Eggs In A Nest on serving plates and top each with the toasted bread circle.
