    Lauren's Favorite Meatloaf

    Recipe Introduction

    This is made a lot like a pot roast and is juicy and delicious.

    List of Ingredients

    Meatloaf:
    1 lb hamburger
    2 Tbsp ketchup
    1 egg
    1 packet of Lipton's Recipe Secrets Onion or Onion-Mushroom
    1 sleeve saltine crackers, crushed
    salt and pepper to taste
    Vegetables:
    3 - 5 medium potatoes
    3 - 5 carrots or a handful of baby carrots
    Gravy:
    3 - 4 Tbsp flour
    1 c hot tap water
    salt and pepper to taste


    Recipe

    Mix all ingredients by hand until thoroughly mixed together, then form into a loaf shape. (I do this right in the casserole dish.) Place in a casserole dish that has a lid and plenty of room around the sides of the meatloaf. Preheat oven to 350 degrees, then put casserole dish uncovered in the oven for 15 minutes. While the meatloaf is cooking, peel some carrots and potatoes (as many as desired or will fit in the dish around the loaf) and cut into large chunks. After 15 minutes, take the casserole dish out of the oven and place the carrots and potatoes around the meatloaf. Add enough water to almost cover the vegetables, then place the lid on the dish and return to oven. (I like to add a little more pepper onto the vegetables after I add water.) Bake for 1 hour at 350 degrees. Vegetables should be fork tender. Remove from oven, then remove vegetables and loaf from casserole dish and place on platter like a pot roast. The juice left in the dish can be made into a gravy that is delicious: Put drippings into a pan or if your dish can be used on the stove-top, leave them in the dish and heat to a boil. In separate measuring cup or glass, place about 3 - 4 Tbsp of flour and add about 1 cup of hot tap water. Stir until flour dissolves. Once drippings begin to boil add flour/water mixture stirring constantly. Turn the heat off and continue to stir until gravy is the consistency you prefer. If the gravy didn't thicken like you like it, make more flour/water mixture and reheat to a boil. Add the mixture in small portions until gravy thickens. Be sure to stir, stir, stir! This tastes delicious on the loaf or the vegetables. Enjoy!
