    Black And Gold Polenta

    List of Ingredients




    Pam Cooking Spray
    4 cups vegetable broth
    1 1/2 cups cornmeal, yellow
    3/4 cup Parmesan cheese, grated
    1 can black beans, drained and chopped
    1 cup Sharp cheddar cheese, grated
    2 tablespoons cilantro, dried
    salt and pepper, to taste
    1 dash thyme
    1 tablespoon garlic, minced
    2 cloves shallots, chopped
    2 dashes nutmeg
    2 dashes cumin powder
    2 tablespoons dried parsley
    4 slices Provolone cheese, sliced thin

    Recipe



    Drain black beans and place in a food processor and chop until coarsely ground. Place in a bowl with chopped shallots, garlic, salt and pepper, cilantro, nutmeg, cumin and thyme. Taste the bean mixture to make sure that it is highly seasoned. You will know it is good when you can eat it alone.

    Preheat oven to 350 degrees. Spray a 8x8x2 inch baking dish with vegetable oil spray. Bring broth to boil in heavy medium saucepan over medium heat. Gradually whisk in cornmeal. Continue to whisk until mixture is very thick, about 3 minutes. Mix in cheese. Pour one layer into dish. Top with black beans. Top with cheddar cheese. Pour remaining polenta over top. Top with sliced provolone cheese.

    Bake until provolone cheese has melted and is lightly golden and the mixture is set, 20 to 30 minutes.
