    Sourdough Buns

    List of Ingredients




    3 cups flour (I like half whole wheat, half unbleached)
    1 package yeast
    1-1/2 tsp. salt
    2 tbsp. sugar
    1/4 cup dry milk powder
    1 tbsp. butter, soft
    1/2 to 1 cup water, warm
    1 cup sourdough
    1 egg

    These are very good and light, the original recipe comes from King Arthur but I changed it for me.

    Directions:
    Mix dry ingredients and butter in bowl, add half a cup water, the sourdough and the egg and knead, adding more water if necessary.Knead very well until you have a smooth, not too stiff dough.Let rise one hour or overnight in refrigerator (I think this dough really wins if you give it a cold, long rise).Punch down and shape into a log, 13 inches or so.Slice log into 8 pieces and place them on parchment-lined baking sheet, leavin gonly half an inch space inbetween them.Let rise 40 minutes until doubled, preheat oven to 375° meanwhile.Sprinkle buns with cornmeal and bake 15-20 minutes.They freeze super!
