    Very Low Fat Banana Bread

    List of Ingredients




    1/4 cup butter
    1/3 cup applesauce
    1 lg.egg
    1 cup fructose sugar plus sweetener equal to 1/4 cup sugar
    1-1/2 cups banana puree
    1/2 cup buttermilk
    1 tsp. vanilla
    1 tsp. baking soda
    2-1/2 flour
    3/4 cup chopped nuts if desired
    1/2 tsp. salt

    Developed this from my fav banana bread for my Daddy after he left the hospital and had to eat low fat/no glucose.It's quite good for so little "real" ingredients and keeps some days.And when you decide you need some fullfat stuff - my dog&horse liked it very much, too.

    Directions:
    Grease and flour a 9by5 loaf pan.Heat oven to 350°.
    Mix butter (soft), applesauce, sugar, vanilla, salt, egg, buttermilk and banana in large bowl (no need for an electric mixer).Add flour and soda, stir in nuts as last.Pour batter into pan and bake for 1 hour and 10 minutes.Let stand in pan for 10 minutes, remove gently and let cool on rack or serve warm.
