White Chocolate and Cranberry Apricots

Recipe Introduction
This simple sweet concoction provides an elegant and light cocktaildessert. They also make terrific gifts and are marvelous for using as garnishes on a wide variety of desserts. White chocolate candy wafers
made especially for melting can be used in this recipe in place of the white chocolate or chips.
List of Ingredients
6 ounces - chopped white chocolate or white chocolate chips
48 - dried apricot halves
48 - dried cranberriesRecipe
Spread a sheet of waxed paper on a baking sheet. Place a medium saucepan over medium heat and fill with a few inches of water. Place a bowl or double boiler over the pot so that the bottom of the pot is just above the water. Add the white chocolate to the bowl and melt, stirring constantly. Remove the pot from the stove, but keep the bowl over the water to keep the chocolate warm while you dip the apricots. Dip half of each apricot into the white chocolate mixture, making sure to coat each side well. Place the apricot on the prepared baking sheet and press one dried cranberry into the melted chocolate in the center of the coated half. Repeat with the remaining ingredients. Chill until firm.
The apricots can be made up to 48 hours before serving. Simply layer the chilled firm apricots between layers of waxed paper in an airtight container.
Makes 48 apricots.
