    My Father's Recipe

    List of Ingredients


    • 2 lbs. dry baby Lima beans or (1 lb. large dry lima beans)
    • enough water to fill pot
    • 1 1/2 cups ketchup
    • salt & pepper to taste
    • 1-2 onions, chopped fine
    • 1/2 to 1 lb. raw bacon, cut into small pieces


    Instructions


    1. Pick through beans to take out bad pieces & any other things that are not the beans. Wash beans thoroughly before starting this recipe.

    2. Place beans into large pot or Dutch oven. Add water to fill pot. Add ketchup, onions, bacon, salt & pepper to taste.

    3. Cover beans with lid and make sure to tilt lid partially opened.

    4. Cook for 2 hours on high, then 1 hour on low. Check after 2 hours for sticking & if more water is needed.

    5. I serve this with buttered bread.

    6. NOTE: If adding more water, taste for ketchup, salt & pepper to taste. By adding more water, it will be bland, so add ingredients little by little to your liking. Taste as you go.



    Final Comments


    You can double this recipe if needed. You need to have a large stockpot. I make large quantities and freeze in individual containers. I let thaw out in refrigerator and heat up in microwave safe bowl or on the stovetop.
