    Recipe Introduction


    I know this has an official name, but I can't remember it anymore. It is so easy and delicious. You can add cooked chicken or ground beef, but we like it this way as a side dish. Serve with a nice salad.


    List of Ingredients


    • 1 pkg corn tortillas
    • 8 oz shredded cheddar cheese
    • 8oz shredded montery jack cheese
    • 1 small can diced chilis
    • 1 medium onion, diced
    • 3-4 cloved garlic, minced
    • 1 pint half and half
    • 1T butter
    • 1T olive oil


    Instructions


    1. Preheat oven to 350
    2. Melt butter in large skillet and add oil
    3. Saute onions and garlic until translucent
    4. meanwhile, tear tortillas into rouch wedges--about 6 per tortilla. Layer with cheeses in 9 X 13 pan--reserving 1/4 cup cheese
    5. Add diced chilis and most of pint of half and half to skillet mixture and heat through--DON'T BOIL!
    6. Pour skillet mixture over cheese and tortillas, top with remaining cheese
    7. Bake 45 minutes, or until top is lightly browned and bubbly.
