    Pumpkin Cheeseball

    Source of Recipe

    Cut from unknown magazine

    List of Ingredients

    • 1 pkg (8 oz) cream cheese, softened
    • 1/2 cup canned or cooked pumpkin
    • 1 can (8oz) crushed pineapple, WELL drained
    • 2 cups shredded sharp cheddar cheese
    • 1 pkg (2 1/2 oz) dried beef, finely chopped
    • 1 TBS chopped onion
    • Celery leaves

    Instructions

    1. In a mixing bowl, beat cream cheese, pumpkin, and pineapple. Stir in cheddar cheese, beef and onion. Shape into a ball and place on serving platter.

    2. Score sides with a knife to resemble pumpkin and add celery leaves for a stem.

    3. Serve with crackers and raw vegetables.

    Final Comments

If you use cooked pumpkin, make sure you drain as much water off as possible. I let the pinepple and pumpkin drain as I'm chopping up the other ingredients.

I used Beef Jerky for the dried beef.

I have made this twice, and both times, the mixture seems too gooey and sticky, but after it sits in the refrigerator, it tends to thicken up and keep its shape.
