    Rising Sun Muffins

    These are healthy, low-fat muffins that are great to snack on.


    List of Ingredients


    • 1 1/2 cup flour (whole wheat flour is the best)
    • 1/2 cup bran or wheat germ (or a mix of both)
    • 2 tsp. baking soda
    • 2 tsp. baking powder
    • 1 tsp. salt
    • 1 egg
    • 1 egg white
    • 2 Tbl oil (or applesauce may be used for lower fat content)
    • 2 tsp vanilla
    • 3 med ripe bananas
    • 1/2 cup brown sugar
    • 1/2 tsp cinnamon
    • 1/2 tsp nutmeg
    • nuts of your choice (optional but great for added protein)


    Instructions


    1. Preheat oven to 375 degrees.
    2. Stir together all dry ingredients.
    3. Combine remaining ingredients in a separate bowl with fork.
    4. Stir dry mix into wet mix. Do not overmix.
    5. Spray muffin pan with Pam or similar spray.
    6. Bake for 20 - 25 minutes.
