Yankee Ranger Cookies
This is an adapted version of oatmeal cookies for the health-conscious. They are not exactly low-fat but they are healthy!
List of Ingredients
- 1 1/4 cup flour
- 3/4 cup mix of wheat bran, oat bran and wheat germ
- 1/2 tsp salt
- 1/2 baking soda
- 1/4 tsp baking powder
- 2 cups oatmeal
- 1 cup chopped walnuts
- 2 cups Rice Krispies
- 1/2 cup butter
- 1/2 cup shortening
- 2 eggs
- 2 cups brown sugar
- 2 tsp vanilla
Instructions
- Preheat oven to 375 - 400 degrees.
- Toast Krispies and walnuts in the oven while it is preheating.
- Mix all dry ingredients together.
- Mix remaining ingredients in separate bowl.
- Combine all, including walnuts and Krispies.
- Drop by teaspoonfulls on greased cookie sheets.
- Bake 8-10 minutes. Put them in ziploc bags to make them soft and chewy.
