VEGETABLE BEEF SOUP

A quick and delicious soup both adults and kids will love.
List of Ingredients
- 1 pound ground beef
- 1 Cup chopped white onion
- 2 tablespoons butter
- 4 Cups hot water
- 1 can (16 oz.) stewed tomatoes
- 1 Cup sliced celery
- 1 Tablespoon salt
- 3 - 4 beef bouillon cubes
- 1 bay leaf
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 1 package 10 oz. mix vegetables
- 1 package vegetables for soup
- 2 cups egg bow tie noodles
- 1/2 teaspoon thyme
Instructions
- Saute beef and onions in butter in Dutch oven until meat is well browned. Add water, tomatoes, celery, salt, bouillon cubes, bay leaf,Worcestershire sauce and pepper. Bring to aboil, cover and simmer 30 minutes.
- Add mixed vegetables, soup vegetables, noodles and thyme. Bring to a boil. Cover andsimmer for another 15 minutes. (You can also add 1 can beef broth at the end if soup is toothick.) Makes 8 - 10 servings.
