    Another time you might substitute cooked pork or ham for the chicken.


    List of Ingredients


    • 4 c cooked white rice
    • 1 can (16 oz.) tomatoes, drained and chopped
    • 1 small onion, chopped
    • 2 c cooked chicken, in bite-size pieces
    • salt/pepper to taste
    • 1 c sour cream
    • 1 can (7 oz.) whole green chilies, seeded and cut in strips
    • 3 c shredded jack cheese
    • 1 can (2-1/4 oz.) sliced ripe olives, drained


    Instructions


    1. In large bowl, combine the rice, tomatoes, onion and chicken. Season with salt and pepper. Spoon half of the mixture in an even layer in a greased shallow 2-1/2 quart casserole. Cover the half of the sour cream, half the chili strips, half the cheese and all the olives. Repeat layering with remaining chicken mixture, sour cream, chilis and cheese. This much can be done ahead; cover and chill as long as 24 hours.
    2. Bake, uncovered, in a 350 degree oven for 45 minutes (1 hour if chilled), or until hot throughout. Let stand 10 minutes before serving. Makes 6-8 servings.
