    LEMON JELLO DESSERT

    List of Ingredients


    • 1 small pkg. lemon jello
    • 1 c boiling water
    • Rind & juice of 1 lemon
    • 1 tsp vanilla
    • 1/2 c sugar
    • 1 large can evaporated milk, chilled
    • 15 graham crackers, crushed into fairly fine crumbs
    • 1 tsp nutmeg


    Instructions


    1. Dissolve jello in boiling water in medium size bowl. Refrigerate until consistency is pretty thick (syrupy), but not gelled. Beat in the sugar and lemon juice/rind. In another bowl, beat the evaporated milk until whipped and peaks can be formed. Gradually stir in lemon mixture, then stir in vanilla.
    2. Spray a glass dish (9"x 11-3/4"x 1-1/2") with Pam. Sprinkle half of graham cracker crumbs and nutmeg on bottom of dish. Pour in jello mixture. Sprinkle with remaining crumbs and nutmeg. Chill a couple hours or until set.
