List of Ingredients
- 1 lrg or 2 med lemons
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 pkg Waterfront Bistro Barramundi fillets, thawed and blotted dry
- Salt/pepper
- 1 small clove garlic, minced
- 1 Tbsp Safeway SELECT capers, drained
Instructions
- Cut 3 thin slices off one end of lemon; cut each slice in half and set aside. Squeeze remaining lemon and measure 2 Tbsp of juice.
- In a lrg skillet over medium heat, heat olive oil and butter until melted. Add fish, sprinkle with salt/pepper and cook for 3 min. If butter begins to burn, turn down heat to medium. Turn fish and cook 2-3 more min or until cooked thru. Remove to plates.
- Add lemon juice, lemon slices, garlic and capers to drippings in pan. Cook, stirring for 1 min. Spoon over fish and serve. Makes 2-3 servings.
