SEAFOOD LASAGNA

List of Ingredients
- 1/2 lb. crab, cooked
- 1/2 lb. shrimp, cooked
- 1, 16 oz. container ricotta cheese
- 1 small jar pimento, chopped
- 2 cans Cream of Shrimp Soup
- 1 soup can milk
- 1 large onion, chopped
- 4-6 oz. canned sliced mushrooms
- 1 egg, beaten
- 1 tsp dried basil
- salt/pepper to taste
- 1 c (4 oz.) grated sharp Cheddar cheese
- 9 lasagna noodles, cooked
- 1/2 c grated sharp Cheddar cheese
- Parmesan cheese
Instructions
- Saute onion 1 Tbsp margarine. Add soup, milk, seafood, mushrooms and pimento.
- Combine ricotta, egg, basil and salt/pepper.
- Place layer of 3 lasagna noodles on bottom of greased 9" x 13" baking dish. Add layer of ricotta mixture, seafood mixture and a sprinkling of Cheddar cheese. Repeat layers twice more. Bake, uncovered, at 350 degrees for 30 minutes. Sprinkle some Parmesan cheese and the 1/2 c Cheddar cheese on top and bake another 15 minutes more. Let sit 10 minutes before serving.
