SHRIMP "MAISONETTE"

- 1-1/2 lbs. frozen, peeled and deveined shrimp
- 1/2 c (1 stick) butter or margarine
- 2 shallots, finely chopped OR 1 Tbsp finely chopped onion
- 4 cloves garlic, chopped
- 1/2 lb. mushrooms, sliced
- 1 c dry white wine
- 2 Tbsp chopped parsley
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 Tbsp lemon juice
- Hot cooked rice
Instructions
- Cook shrimp following label directions, being careful not to overcook. Split lenngthwise.
- Melt butter in large skillet. Add shallots; cook about 30 seconds until transparent but not brown. Add garlic and mushrooms; cook 30 seconds longer, stirring constantly.
- Add shrimp; cook 30 seconds. Stir in wine; cook 2 minutes. Stir in parsley, salt and pepper. Sprinkle lemon juice over shrimp, mixing gently. Serve over rice. Makes 6 servings.
