    CHEF PEPPIN'S BEEF PIE

    List of Ingredients


    • 4 c chopped left over roast beef
    • 1 small onion, chopped
    • 2 cloves garlic, minced
    • 2 Tbsp butter
    • 2 Tbsp flour
    • 2 c beef bouillon
    • 2 lbs. potatoes, peeled & quartered, boiled with 1 clove garlic
    • 1-1/4 to 1-1/3 c milk
    • 1 tsp salt
    • 3 eggs
    • 1/2 c plus some extra Cheddar cheese


    Instructions


    1. Heat butter in medium-sized skillet. Saute onion and garlic til tender. Add meat, stirring occasionally, til heated up. Gradually add flour; then gradually stir in bouillon, continuing to stir, until thickened. Keep warm.
    2. Removed garlic from potatoes. Mash potatoes (using electric mixer) with the milk, salt, eggs and cheese. (will be soupy.)
    3. Place beef mixture in greased casserole. Top with potatoes. Sprinkle with more cheese. Bake at 350 degrees about 40 minutes. Potatoes will get puffy and dehydrate.
