    • 4 oz. penne pasta
    • 2 Tbsp. olive oil
    • 1 large onion, chopped
    • 2 red bell peppers, chopped
    • 3 cloves garlic, minced
    • 1 lb. 95% lean ground beef
    • 2 cans (14.5 oz. each) diced tomatoes
    • 2 c. chopped baby spinach
    • 1 tsp. dried oregano or Italian seasoning
    • 1/2 tsp. salt
    • 2 Tbsp. pine nuts, toasted


    Instructions


    1. Prepare pasta according to package directions.
    2. Heat oil in large skillet over medium heat. Cook the onion, peppers and garlic, stirring for 3 min. Add the beef and cook, stirring, for 5 min. or until browned and no longer pink.
    3. Stir in the tomatoes, spinach, salt and cooked pasta.
    4. Sprinkle top with the pine nuts. Serves 4 at 427 cal. each (39.3 g. carbs)
