    List of Ingredients


    • 8 oz. whole wheat fettuccine
    • 1 Tbsp. butter
    • 3 garlic cloves, minced
    • 2 tsp. cornstarch
    • Pinch of ground nutmeg
    • 3/4 c. low-fat, low-sodium chicken broth
    • 3/4 c. grated Parmegiano-Reggiano cheese
    • 3/4 c. 2% Greek yogurt
    • Salt and freshly ground black pepper


    Instructions


    1. Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions, 9-11 min.; drain.
    2. While pasta is cooking, melt the butter in a large nonstick saute pan over medium heat.
    3. Add the garlic and cook until it is fragrant, about 2 minutes.
    4. Meanwhile, combine the cornstarch and nutmeg in a small bowl. Whisk in the chicken broth until smooth. Pour the mixture into the saute pan, raise the heat, and bring the sauce to a simmer, whisking occasionally.
    5. Whisk in 1/2 c. of the cheese until it has melted.
    6. Remove the saute pan from the heat and whisk in the yogurt until the sauce is smooth.
    7. In a large bowl, toss the cooked fettuccine with the Alfred sauce. Season with salt and pepper to taste. Top the pasta with the remaining 1/4 c. cheese and serve. Serves 4
