    Baked Balsamic Chicken Cutlets

    • 4-5 thinly sliced chicken cutlets
    • 1/2 cup Italian bread crumbs
    • 1 egg, beaten
    • 2 Tbsp. olive oil
    • 2 Tbsp. balsamic vinegar


    Instructions


    1. Preheat oven to 350 degrees. In a bowl, beat the egg. In separate larger bowl or plate, add the breadcrumbs.
    2. Dip each piece of chicken into the egg, then the breadcrumbs, making sure to coat them entirely.
    3. Place chicken in a glass baking dish coated with non-stick spray. Cover with foil and bake for 20 minutes, turning chicken at the halfway point.
    4. In small bowl, mix the olive oil and balsamic vinegar.
    5. Remove the foil and brush the chicken liberally with oil and vinegar mixture.
    6. Bake uncovered for another 5 minutes. Serves 4.
    7. Each serving: 130 cal., 9 g. fat, 10 g. carbs., 115 mg. sodium.
