    Peanut Slaw

    List of Ingredients


    • 1 head red cabbage
    • 1/2 bag shredded red cabbage
    • 1/2 bag shredded regular cabbage
    • 3/4 c. to 1 c. finely chopped celery
    • 1/2 c. finely chopped chives
    • 1/2 c. unsalted dry roasted peanuts
    • 2 Tbsp sugar or Splenda
    • 2 Tbsp vinegar
    • 1 tsp salt
    • 1/4 tsp cracked pepper
    • 1/4 c. salad oil


    Instructions


    1. Create "bowls" from head of red cabbage by cutting in half and pulling cupped pieces apart. This will create the serving dishes that will be placed on dinner plates.

    2. Chop up the shredded red and regular cabbages even finer and place in bowl.

    3. Add celery and chives. Keep cold while preparing dressing.

    4. Combine the sugar (or Splenda), vinegar, salt and pepper in a small micro-safe bowl. Heat on high for about 1 min., stir and let rest to cool to room temp.

    5. When ready to serve, place a red cabbage "bowl" on each dinner plate. Add peanuts to slaw mixture. Add salad oil to dressing ingredients.

    6. Toss slaw portion of salad and dressing together and place in each red cabbage "bowl" on dinner plates. Makes 4-6 servings.
